Ingredients:
- 1 3/4 cup sifted flour
- 2 cups granulated sugar
- 1 cup black coffee (I used Starbucks!)
- 1 cup (unpacked) cocoa powder
- 2 teaspoons baking soda
- 1 1/4 teaspoons baking powder
- 1 1/4 teaspoons sea salt
- 2 large eggs
- 1 cup buttermilk
- 1 1/2 teaspoon vanilla extract
- 1/2 cup vegatable oil
Frosting:
- 1/2 cup salted butter softened
- 2 ounces melted sweetened chocolate (room temp)
- 2 teaspoons vanilla extract
- 3-4 cups sifted powdered sugar
Directions:
- Combine your dry ingredients leaving out the coffee: sifted flour, granulated sugar, cocoa, baking soda, baking powder, and salt in a large mixing bowl.
- Add all your wet ingredients and coffee while continuing to mix: eggs, coffee, buttermilk, oil, and vanilla. Beat together at a low speed and moving up to a higher speed for two minutes. The batter will seem a little runny.
- Pour batter into your two greased 9 inch cake pans.
- Bake at 350 degrees for 30-35 minutes. I of course took my cake out early.
- Combine frosting ingredients and mix with a hand or stand mixer. Spread frosting on cooled cakes.
