Snickerdoodle Muffins!

Since I was a little girl, snickerdoodle cookies have always been my favorite. My mom wasn't much of a cook, and when she did cook sweets she made either peanut butter kiss cookies or chocolate chip. While each of these cookies are equally tasty, they just didn't compare to a delicious snickerdoodle cookie. I had to go to my grandmothers house to get a taste of a warm snickerdoodle.

My grandmother was a hefty lady, she enjoyed making sweets even more than I do, and I believe that is where ,my sweet tooth originated, right in her kitchen. She bought me my first Easy Bake oven when I was nine years old. I remember my mother was furious because she knew I'd make a mess of the carpet with my concauctions. Little did my grandmother know, she had stirred something in me. From then on I was cooking little treats for anyone who looked a slite bit hungry.

Unfortunately my treats never turned out as good as my grandmothers until I got older. If you have a memory of a snickerdoodle cookie that warms your heart, I'm sure these snickerdoodle muffins can do the same!

Ingredients
  • 2 sticks softened salted butter (room temperture)
  • 1 1/4 cup granulated sugar
  • 2 1/2 tsp vanilla extract
  • 2 large eggs
  • 1 1/2 cup sour cream
  • 2 1/4 cups flour
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • To sprinkle on top:
  • 1/2 cup powdered sugar
  • 2-3 Tablespoons cinnamon
Instructions
  1. In a bowl cream together the softened butter and sugar until soft and well combined (about 3-5 minutes). Add the vanilla and then the eggs, one at a time. Mix until well combined. Should be pretty gooey.
  2. In a separate bowl, mix together the remaining dry ingredients.
  3. Slowly add the dry mixture to the wet mixture. (Continue mixing) Then add a portion of your sour cream and combine. Keep adding more sour cream until everything is well combined.
  4. Scoop the batter into lined muffin tins.(I sprayed the muffin tins with Pam to be safe!) Combine the sugar and cinnamon. Sprinkle a spoonful over top the top of each muffin.
  5. Bake at 350 degrees for about 22 minutes. I took them out sooner and let them continue to cook on the pan!
 
 
These muffins are finger-licking-good. I have no doubt that anyone who loves a snickerdoodle cookie would turn down one of these sweet muffins! Enjoy guys!
