Funfetti Cake Batter Cookies

This has to be the easiest, yummiest and funnest cookie to make. My son loved helping me whip these up in the kitchen. I had gotten the idea from a family friend who would use funfetti cake batter to make cookies. Hers always turned out a little dry and I kept thinking how pretty they would look with some sprinkles thrown in! I've seen a recipe like mine floating around on Pinterest but I'm pretty sure mines better! I always say that but seriously... check em out!

Ingredients:

  • 1 box french vanilla cake mix (moist if available!)
  • 1 1/4 tsp baking powder
  • 2 eggs
  • 1/2 C vegetable oil
  • 1 1/4 tsp vanilla extract
  • 2 cups colored sprinkles -I go crazy and add more!

Directions:

  1. Preheat oven to 350° and grease a cookie pan.
  2. In a large bowl, mix together the cake mix and the baking powder.
  3. In a small bowl, mix the wet ingredients together: the eggs, oil and vanilla. Add the egg mixture to the cake mixture and stir to combine.
  4. Stir in your sprinkles!!!
  5. Drop by spoonfuls onto your greased cookie sheet.
  6. Bake for about 8 minutes. I take them out at about seven minutes so that the bottoms don't burn!

These cookies are way too easy! And this recipe makes a ton of cookies. I was amazed! If you're ever in a pinch and need a ton of cookies quick... this is the recipe for you... and they are yummmmy!
