Funfetti Cake Batter Cookies
This has to be the easiest, yummiest and funnest cookie to make. My son loved helping me whip these up in the kitchen. I had gotten the idea from a family friend who would use funfetti cake batter to make cookies. Hers always turned out a little dry and I kept thinking how pretty they would look with some sprinkles thrown in! I've seen a recipe like mine floating around on Pinterest but I'm pretty sure mines better! I always say that but seriously... check em out!
These cookies are way too easy! And this recipe makes a ton of cookies. I was amazed! If you're ever in a pinch and need a ton of cookies quick... this is the recipe for you... and they are yummmmy!

Black Magic Voodoo Cake
Black Magic Cake sounds like an old voodoo woman's baking trick to lure men into her throws, and while I can't deny that it could very well be used in that matter, I'll assure you that the only magic this cake possesses is the ability to disapear. Literally, and I'm serious, this cake lasted 15 minutes in my kitchen. It was that good. A moist chocolate cake covered in the perfect frosting really leaves little room for exaggerration. It's good, duh! So while I could sit hear and explain how the chocolate flavors seep into your mouth like warm molasses and the flavors burst giving you a chocolate comatose kind of feeling... I think that would be complete torture.. So here's the recipe, enjoy and tell me what you think of this Black Magic Voodoo Cake!
Ingredients:
- 1 3/4 cup sifted flour
- 2 cups granulated sugar
- 1 cup black coffee (I used Starbucks!)
- 1 cup (unpacked) cocoa powder
- 2 teaspoons baking soda
- 1 1/4 teaspoons baking powder
- 1 1/4 teaspoons sea salt
- 2 large eggs
- 1 cup buttermilk
- 1 1/2 teaspoon vanilla extract
- 1/2 cup vegatable oil
Frosting:
- 1/2 cup salted butter softened
- 2 ounces melted sweetened chocolate (room temp)
- 2 teaspoons vanilla extract
- 3-4 cups sifted powdered sugar
Directions:
- Combine your dry ingredients leaving out the coffee: sifted flour, granulated sugar, cocoa, baking soda, baking powder, and salt in a large mixing bowl.
- Add all your wet ingredients and coffee while continuing to mix: eggs, coffee, buttermilk, oil, and vanilla. Beat together at a low speed and moving up to a higher speed for two minutes. The batter will seem a little runny.
- Pour batter into your two greased 9 inch cake pans.
- Bake at 350 degrees for 30-35 minutes. I of course took my cake out early.
- Combine frosting ingredients and mix with a hand or stand mixer. Spread frosting on cooled cakes.
This cake is absolutely delectable and I hope you guys find it mouthwatering! Let me know what you think!
Next time I have some Funfetti Cookies!!!

Snickerdoodle Muffins!
Since I was a little girl, snickerdoodle cookies have always been my favorite. My mom wasn't much of a cook, and when she did cook sweets she made either peanut butter kiss cookies or chocolate chip. While each of these cookies are equally tasty, they just didn't compare to a delicious snickerdoodle cookie. I had to go to my grandmothers house to get a taste of a warm snickerdoodle.
My grandmother was a hefty lady, she enjoyed making sweets even more than I do, and I believe that is where ,my sweet tooth originated, right in her kitchen. She bought me my first Easy Bake oven when I was nine years old. I remember my mother was furious because she knew I'd make a mess of the carpet with my concauctions. Little did my grandmother know, she had stirred something in me. From then on I was cooking little treats for anyone who looked a slite bit hungry.
Unfortunately my treats never turned out as good as my grandmothers until I got older. If you have a memory of a snickerdoodle cookie that warms your heart, I'm sure these snickerdoodle muffins can do the same!

- 2 sticks softened salted butter (room temperture)
- 1 1/4 cup granulated sugar
- 2 1/2 tsp vanilla extract
- 2 large eggs
- 1 1/2 cup sour cream
- 2 1/4 cups flour
- 3/4 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1 1/4 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- To sprinkle on top:
- 1/2 cup powdered sugar
- 2-3 Tablespoons cinnamon
Instructions
- In a bowl cream together the softened butter and sugar until soft and well combined (about 3-5 minutes). Add the vanilla and then the eggs, one at a time. Mix until well combined. Should be pretty gooey.
- In a separate bowl, mix together the remaining dry ingredients.
- Slowly add the dry mixture to the wet mixture. (Continue mixing) Then add a portion of your sour cream and combine. Keep adding more sour cream until everything is well combined.
- Scoop the batter into lined muffin tins.(I sprayed the muffin tins with Pam to be safe!) Combine the sugar and cinnamon. Sprinkle a spoonful over top the top of each muffin.
- Bake at 350 degrees for about 22 minutes. I took them out sooner and let them continue to cook on the pan!
These muffins are finger-licking-good. I have no doubt that anyone who loves a snickerdoodle cookie would turn down one of these sweet muffins! Enjoy guys!

My latest action is not too sweet...
I hate to admit it... but taking something you loved doing for fun.. and making it a requirement for your class not only makes it a chore, but its ruined my cooking skills! I really tried to make a fresh batch of brownies to share with you guys.. and I was sure they would be scrumptious... but the whole thing was a complete disaster. I would have loved to share my recipe for turtle brownies but something went horribly wrong. It could have been that I'm completely stressed lately, lacking a good amount of sleep, or it might just be that cooking is not cooking to me anymore. I hate to break it to you but I have lost my touch. It's just not the way it was before. But I'll be back in the kitchen shortly.. I'm just going to take a short hiatus to hopefully get my stuff together.. and spatula in hand make some greatness that I can share with all of you!

I promised you a Mexican inspired dessert so I came to deliver. This cake is called Dulce De Leche cake. It's easy and really fun to make. It's sweet and covered in molten caramel. I found my sister and son licking the bowls clean after I finished making each individual part. It's not easy to find a cake recipe that is this easy, this beautiful and this delicious. I was definitely shocked when the final product came out as pretty as I had hoped. It looked almost as good as it tasted. I'm not the best cake frost-er (It might be because I get so anxious wanting to try and share my concoction) but it still turned out looking fabulous and a little on the fancier side for me. I enjoy that it's two tiers so you get a little ribbon of gooey caramel throughout and the lightness of the white whipped frosting adds just the right amount of sweet to this amazing cake! Enjoy guys!
Ingredients:
1 White Cake Mix
3/4 cup softened salted butter
5 large eggs
1/2 cup water
1 jar white cream frosting (I used whipped)
1 can sweetened condensed milk (about 14 oz.)
1 can Dulce De Leche (you can find this in the ethnic cooking section.) (about 14 oz)
Directions:
1. Preheat your oven to 350 degrees and spray two round cake pans with a nonstick cooking spray.
2. In a large bowl combine your white cake mix, softened butter, eggs and water. Mix on low speed and slowly increase until combined. Pour into nonstick round pans and bake for 35 minutes. Watch carefully so that they don't burn!
3. In a sauce pan over low heat combine sweetened condensed milk and dulce de leche until thick, well-combined, and slightly bubbling.
4. Take one of the round cakes and pour the dulce/cream combo over the top. It should be really thick and spread nicely. Layer the other round cake on top and pour more dulce/cream over the top.
5. Put the cake in the freezer until the dulce/cream has cooled and is hard.
6. Frost the cake with the white frosting and drizzle some leftover dulce/cream over the top. Voila!
Simple as that you've got a delectable dessert that is finger-licking good. A coworker of mine told me he could easily sit down and finish the whole cake but I don't suggest chowing down on something this rich... but it could happen! Grab a cup of milk and enjoy!
Thanks again guys!
